Taking the ‘Oink’ out of BBQ Pulled Pork: Cooking with Jackfruit

Pulled PorkLast week, we released a chilling undercover video filmed inside a pig breeding factory farm in Iowa. The footage reveals the day-to-day miseries forced upon thousands of female pigs—who are confined to tiny crates where they can’t even turn around—and their piglets, who endure painful mutilations without any relief.

The abuse in this footage will make anyone’s stomach turn. And it might compel us to turn our habits. In fact, discovering the painful truth about where our foods comes is empowering millions of people to make kinder choices. Thankfully, leaving animals out of our diets won’t leave an empty spot on our plates or in our stomachs. And with so many meatless options available today, it’s never been easier to choose compassion — it’s all about exploring new foods.

Pulled PorkEnter jackfruit: Relatively new to the average consumer, jackfruit can satisfy even the most voracious cravings, while also pleasing those sensitive to soy or gluten. This green, prickly pod is native to Southern Asia and is the largest tree-borne fruit in the world, sometimes weighing up to 80lbs!

It can be eaten unripe if cooked and ripe cooked or raw. Slow-cooked jackfruit resembles a shredded pork texture. You can find it in cans at Asian markets; look for the type in water­­, not syrup! Jackfruit is said to help cure ulcers, aid indigestion, and is packed with nutrients that offer cancer-fighting properties. 

My favorite way to cook jackfruit is as “pulled pork” BBQ. Served on toasted ciabatta, with veg mayo, and a slice of grilled pineapple, it’s a savory tropical-delight that everyone will enjoy — especially the animals!

Pulled Pork

BBQ Pulled “Pork” Jackfruit

  • 2 cups or 1 can of jackfruit, peeled, seeded and chopped
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • ¼ cup tomato paste or ketchup
  • ¼ cup molasses
  • 2 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 tbsp mustard
  • 1 tbsp olive oil
  • 1 tsp liquid smoke
  • Salt and pepper to taste
  1. Over medium heat, cook onion, garlic and jackfruit in the oil for about 5 minutes until the onions start to cook and the garlic is fragrant. Add the tomato paste and cook for an additional 3-5 minutes, stirring.
  2. Add the remaining ingredients and lower to a steady simmer. Cover and cook for 30-40 minutes, stirring occasionally, until the jackfruit is tender and the sauce is absorbed.
    Add vegetable broth or water if needed.
  3. Serve on toasted buns with all your favorite fixings!

Yields filling for about 4 sandwiches
